Panino With Chicken Mayo, Onions & Arugula
You believe in shortcuts when time management is out of your hands. I have pondered countless times how I can get by with my time without falling apart at the end of the day. Because I do fall apart. Because I do get tired. And I do run out of words to write.
On a beautiful summer day, when my family is making a lot of sounds of splashing in the water while playing and shrieks of excitement which I only hear from inside my room while I am staring at the computer screen, then I think there is something wrong with what I am doing. I went through a whole summer with just a couple of fast dips in the pool and felt the sand in between my toes just once. School is already starting next week and I feel like I have lost one whole season with my kids. Only one question made my world stop. How come you don't stay with us?
I am here and I'd rather run out of words than run out of
time with my family. So I am doing shortcuts. And a shortcut is to
prepare a quick and easy meal.
A panino (or a sandwich) always gets whoops of joy. I have prepared two kinds. My husband likes buying this kind of bread whenever I say that I am making panini so my next panino post has the same kind of bread but different filling.
I love this one from my childhood memories, using cooked chicken (or leftover chicken) mixed with mayo, carrots & celery. Onions are not important but I prefer it with and of course my husband doesn't. I replaced the usual lettuce with rocket or arugula. It's a lovely classic sandwich. I hope you like it.

Panino With Chicken Mayo, Onions & Arugula
Ingredients:
Makes 2
- 1/2 cup cooked chicken, diced
- 1 medium mild onion, sliced
- 3 - 4 tablespoons mayonnaise
- Salt
- Pepper
- 1/4 cup medium steamed or boiled carrot, finely chopped
- 2 tablespoons celery, finely chopped
- Arugula
- 2 pcs. bread (any kind)
- In a bowl, mix the cooked chicken, mayonnaise, carrots, celery, salt & pepper.
- Slice the bread in the middle.
- Distribute the arugula on the bread. Top with the chicken mayo then garnish with the sliced onions.
