Tomato, Mozzarella and Arugula Salad with Anchovy Dressing
Is tomato a fruit or a vegetable?
I asked my third question as my kids and I played their game of questions. They both shouted "vegetable" and when I said that it's actually a fruit, they looked at me as if I was crazy. Then I explained to them that botanically, it is really a fruit but in culinary uses, it's a vegetable. I got more questioning looks. My husband told me not to confuse the kids. Ok, maybe it was too soon to divulge that little piece of information. Now you know too if you don't know yet. I remember how surprised I was when I read about it. I've always thought that it's a vegetable.
Tomatoes are my favorite vegetables. Before having kids, my husband and I grew them in our little garden patch and I remember the amazing smell when we harvest them. They were ugly and sometimes even shapeless but oh my, they were sweet like sugar and they tasted so good! I wish we still have the time and energy to grow our own tomatoes but for now we just have to rely on the farmers.
I prefer the tomatoes raw in salads or just munching on them while slicing them for cooking. If the tomatoes are sweet, the amount of tomatoes I prepare diminish dangerously. How can I resist these aromatic, red, plump vegetables?
For a simple and healthy salad, I chose to mix them with some mozzarella and arugula then dressed with something wonderful - anchovy dressing. It was great! I've always loved the combination of tomatoes, anchovies and arugula then mixed with mozzarella, the dish becomes even richer.
