Orecchiette with Sausages and Peppers
We always have to deal with leftovers. Always. When I pack away the leftover food in containers and put them in the refrigerator, I know that it will go to waste unless I think of a way to revive it again. My kids usually don't like repeats of the same dish so most of the time, I have to find new ways to create a new dish with what got left behind from previous meals. I usually resort to pasta or mixed rice dishes because with them, there are no limitations on what can be put together. The ideas are endless and it's the best way to start with leftovers.
When I have sausages stashed away in the refrigerator, I always take them out of the casing, crumble and sautè them with extra virgin olive oil. I find that bottled grilled or roasted peppers are excellent in combining with the sausages. The flavors blend together like magic. In fact, if I have to make this pasta dish again, I don't need to wait for leftovers. It's a very tasty pasta dish and my choice of pasta blends even way better. The three protagonists, the sausages, peppers and orecchiette create a delicious rich pasta dish that will surely impress you. It did with me and my family!
