Sautèed Fennel, Clementines and Pistachios
Like clockwork every Holiday season, one of my kids is sick, running with fever, cough, colds and sore throat. Last year, it was my daughter. This time, it's my son. Just a few days ago, my husband and I were almost going to hit the "Book Now" button for our little New Year's Eve family escape in Tuscany but since our son had been coughing continuously, we waited for another day and check with his pediatrician first. Right on the dot, his temp soared up the following day. That means it's home for us folks. That also means I am cooking our New Year's Eve dinner.
For the Christmas celebrations, I had the pleasure of enjoying other people's cooking for four straight days. It was nice to sit down, drink the wine and just taste the food that were prepared with care. It had been great to have a break from my kitchen and to have new perspectives in cooking. It was like a holiday of sort and now that my break is finished, I am back in my realm to tackle new dishes again.
I went to Eataly today to stock up on ingredients and bottles of wine and spumante. Being a working weekday, I thought it would be somehow empty but apparently, I was not the only one with the idea of going one step up to avoid the crowd. It was full and the queues were long. I decided to go for a simple seafood menu with easy and light courses so I don't need to cook so much tomorrow. It will be a time to enjoy the food, wine and the company of my family. I think it is a wonderful way to welcome 2015 while the simple joys of my life are encircling me.
To accompany simple grilled seafood, this Sautèed Fennel, Clementines and Pistachios is a wonderful side dish. Not only is it so easy to cook but it is also very tasty. I usually use my fennels and clementines in fresh salads to go with seafood plates and this is the first recipe where I combined both of my favorite salad ingredients in a sautèed dish.
