Penne with Pesto, Potatoes and Peas


When I get asked what I do for a living and I say that I am a recipe developer, I get a questioning look that immediately changes to a reaction of excitement. It's always a promise of a long and interesting conversation. You don't get to meet recipe developers everyday because most often, we are hidden behind our computers and kitchens, creating, creating and always creating dishes. My hubby gets all the pats on the back for being the lucky one to be the consumer of what I photograph. And yeah, he does complain at times. Being the taste tester and the consumer can be a difficult job.

Turning my passion to work is a dream come true. I work at home where I get to stay with the kids and I get to wear the most comfortable clothes I have which sometimes means pjs! Who cares? There really is no dress code. BUT. 


Cooking everyday both for my family and my work has a drawback. I sometimes find myself at a loss in the kitchen, staring endlessly at the contents of my pantry and my fridge. I do draw a blank at times like my mind goes on sleep mode. These are the moments when I take out my emergency recipes which are usually pasta dishes. I always have a little sack of potatoes, a pack of frozen peas, fresh tomatoes, pasta and a bottle of good pesto Genovese. Pesto can stand alone as a delicious sauce for the pasta but when I feel more inspired to move a bit in the kitchen without thinking of something new, I turn to this Pasta with Pesto, Potatoes and Peas recipe. Penne is a kind of short pasta that can be replaced with any kind you have (just not too small). It's a basic kind I have because the kids prefer short pasta. When you have all these ingredients on hand, go ahead and make your next meal. I promise you, you won't be disappointed. Just remember that the over-all taste of this pasta relies on the kind of pesto you put so use your favorite one or a bottle with good quality.

To put or not to put the egg on top. A genuine Italian pasta wouldn't have an egg on top but if you want this to have a different twist, then do it. Both versions are delicious both ways.
