Mini Mango Cheesecake with Chocolate Crust in Jars
Remnants of my memorable trip in the Philippines still remain in my mind and heart as I go back to my regular routine back home. It has been exactly two months and I still do miss so many things that made up my beautiful vacation. Family, friends, food, even the tropical heat that I despised when I was there come to a united reminder that I once lived there, an archipelago of more than 7,000 islands, tropical in every way especially the fruits that I enjoyed the most. Where else can I find such sweet and delicious carabao mangoes but in the Philippines?
I consumed mangoes there like there was no tomorrow and I
was even repeatedly reminded to slow down because they are very rich in
sugar. My answer was short and simple. I only get them this sweet in
the Philippines. I drank fresh mango shakes, I ate fresh mangoes (also
unripe with salads), I refreshed myself with mango ice cream and I devoured mango desserts. All restaurants have something mango in their desserts anyway - to my great luck!
While I was there, one of the recipes I created for She Knows was something local with ingredients that we can all get in any part of the globe. These Mini Mango Cheesecake with Chocolate Crust in Jars use ingredients that are easy to find but the only difference would come out in the kind of mango you use. Now that I am back in Italy, I can still make this delicious dessert but I cannot replicate the exact taste anymore because the kind of mango I can use is different. Get the sweetest variety that you can get like Alphonso, Valencia Pride, Badami, Chaunsa, Nam Dok Mai, Glenn, Sindhri, Madame Francique, Kesar, Keitt, Manila, Ataulfo and other sweet ones (I got most of these varieties from this list).
Making these Mini Mango Cheesecake with Chocolate Crust in Jars is easy and you don't need the oven to bake them. You will just have to mix and refrigerate. Use cream cheese that doesn't have a strong cheesy flavor because it comes out too rich. I use Philadelphia. I am not endorsing it but after trying some brands, this is the only one that goes well with my taste buds - mild and really perfect for cheesecakes.
