Slow Cooker Lasagna with Ragù and Bechamel Sauce


Dear lasagna, as much as I would love to have you every single day, I simply cannot because I can't afford to gain more pounds that I am desperately already trying to shed off before summer arrives. How many times have I hesitated over the idea of making Lasagne al Ragù? A hundred times and then more. It's one of my favorite pasta dishes and to be really specific, my very own version of it because after more than a decade of trials and errors, I finally got the taste that I really wanted. It is a classic case of loving your own.

But after getting an assignment from Skinny Ms. to make a simplified lasagna recipe to be cooked in the slow cooker using low-fat ingredients, I was in for a challenge. Lasagna is cooked in three separate stages - the lasagna sheets, the ragù and the bechamel sauce. Bechamel is quite rich with butter, milk and flour as the main ingredients while my ragù requires pork, beef and Marsala wine. If I can't take away any of the ingredients to make it less fattening, I decided to change as much ingredients I can to the ones with lower fat content. 



I used the slow cooker as a replacement for the oven. They're not the same but the result was very good as the lasagna cooked quite well just like it would have in the oven. As for the bechamel, I had to cook it in a saucepan and to make things simpler, you can use your favorite bottled marinara sauce. You can also make my Slow Cooker Italian Spaghetti Meat Sauce where I used chicken in place of the pork. Of course, you have to make this ahead of the lasagna as it requires the use of the slow cooker too. Another option is to use my Ragù alla Bolognese and just replace the pork with chicken and take away the Marsala wine.
