Velo Pasticceria: The Haute Patisserie of The First Dolce Hotel in Rome

If you have a sweet tooth and living in Rome, then you will be glad to know that there is a new place in town where you can enjoy haute patisserie. Velo Pasticceria is located on the second floor of the 19th-century building of The First Dolce, a luxury boutique hotel by The Pavillions Hotels & Resorts located along Via del Corso, one of the most iconic shopping streets of Rome. Dolce, which means sweet, is the hotel's highlighting feature and at Velo, modern pastries and cakes are showcased along with a selection of tea and wine, and savory gastronomic proposals. It is a gourmet address that finds its maximum expression in the detailed desserts that can be consumed throughout the day, from 12:00 to 23:00.

Velo's resident pastry chef is Ciro Chiummo, a professional with 28 years of experience, who teaches at Aromacademy, the only Accademia di Pasticceria in Rome, and who was a part of the Italian team that won at the 2020 World Cup of Pastry and Ice Cream with their ice sculptures. His creations are perfectly balanced and amplifies the flavors of the ingredients without overemphasis on the sweetness.

On the occasion of the Christmas holiday, from the 25th of November until the 7th of January, Ciro Chiummo opens the doors of the pastry atelier to four important pastry chefs of Italy: Salvatore De Riso, Paolo Sacchetti, Denis Dianin , Luca Montersino. This format, Velo Pastry Season, came out from the joint venture with the well-known Italian food and wine critic Luigi Cremona wherein their creations will be exhibited for an immersive experience of the meaning of confectionery tailoring with the Made in Italy seal. 


It began on November 26 with Sal De Riso, the master pastry chef from Minori in the Amalfi Coast who, during the last Host, ranked first in the Panettone World Championship. For a whole week his products will animate the spaces of Velo. The other chefs will follow suit with their dedicated time window to exhibit their creations. The 3rd of December is dedicated to Paolo Sacchetti, Vice President of the Accademia Maestri Pasticceri Italiani (AMPI) and owner of Pasticceria Nuovo Mondo in Prato, Tuscany. The 6th of December is for Denis Dianin, owner of d&g Patisserie of Padua, one of the world's emerging pastry stars and a master pastry chef of AMPI. Finally, the 13th of December will be held by Luca Montersino, one of the most known pastry chefs in the country for his numerous TV shows, authored books, coined the philosophy of Golosi di Salute, healthy artisan pastries which has a shop in Alba, Piedmont. In these assigned days, the clients of Velo can have the unique opportunity to come into contact with the chefs in their personalized workshops.
