We are in Teano, a small, tranquil town nestled at the southeastern foot of the extinct Rocca Monfina volcano, lies about 30 kilometers from the renowned city of Caserta in the Campania region. Rich in history and vibrant gastronomic tradition, Teano boasts numerous ancient temples, theaters, and churches, with the most prominent being St. Clement's Cathedral. At the heart of this historic town is Locanda De Foris, owned by Chef Pietro Balletta, a passionate preserver of traditional local recipes and flavors.

Arriving at Locanda De Foris through one of the town's ancient gates, you are greeted by a rustic yet refined decor that exudes warm hospitality. This ambiance reflects the meticulous attention to detail that mirrors the culinary philosophy of its chef, Pietro Balletta. His cuisine, while seemingly simple, offers reinterpretations that lighten traditional local preparations without losing the fundamental soul of the kitchen. Locanda De Foris was established in 2017 out of Pietro's desire for change. Before opening the restaurant, Pietro cooked for large gatherings at ceremonies, which led him to yearn for a smaller venue with fewer seats, where he could offer the highest quality to his guests. Pietro's menu is deeply connected to the seasons, with each dish crafted from simple, genuine raw materials, resulting in well-presented and often irresistible offerings.
