The result was EVO Laboratorio Gastronomico, a modern delicatessen with a kitchen lab, located on the outskirts of their hometown, Sora. After gaining valuable experience abroad, the Sacchetto brothers returned to their roots, driven by a desire to invest in the place where they grew up and share their passion for high-quality food.

There isn’t a fixed menu; instead, diners choose from what Jacopo, the chef, and his brother Marco have enjoyed creating with the fresh ingredients they've sourced that day. In addition, their shop offers a well-curated selection of artisan products known for their exceptional quality. However, like many small businesses, EVO has faced challenges, particularly with the rising cost of energy. In a recent Facebook post, the Sacchetto brothers highlighted the staggering increase in their energy bills, which have quadrupled compared to the previous year. Despite these struggles, they remain committed to their business, even offering a 20% discount on all ready-to-eat dishes from Monday to Thursday after 18:00 to reduce waste and provide affordable options for their customers.
