Taste the Emotions with the New 'Inside Out' Menu by the Chefs at Allegrío Rome

Starting on October 1, 2024, Allegrío will bring vibrant emotions to the table with its new "Inside Out by Allegrío" menu, inspired by the animated film Inside Out. Located at 114 Via Veneto and led by Creative Director Sabrina Corbo, Allegrío continues to captivate guests with its blend of tradition and creativity. This new menu joins the existing "Signature" and "La Tradizione" offerings, delivering a unique Emotional Dining Experience. The concept engages the talents of the kitchen, pizzeria, and pastry chefs to seamlessly merge emotions and flavors into a memorable culinary journey.

At Allegrío, the atmosphere is as dynamic as the food, with vibrant colors and an ambiance filled with warmth and positive energy. The restaurant’s four themed rooms Joyful, Lucky, Intrepid, and In Love, reflect different emotions through their decor, creating an immersive experience that complements the emotional journey on the plate. Inspired by the golden years of La Dolce Vita, Allegrío’s offerings celebrate Italian tradition, while the new Inside Out menu is designed to evoke deep emotions and lasting memories, making every meal an unforgettable experience.

Inside Out by Allegrío

The name of this new menu is a tribute to the blockbuster Disney-Pixar animated film Inside Out, which brought emotions to life with colors and characters, teaching young and old about the complexities of human emotions. At Allegrío, emotions have always been central, as seen in their four iconic rooms: Joy, Passion, Luck, and Courage. With this new menu, the emotional spectrum expands with the addition of Nostalgia, Anger, Envy, and Fear.

"What brings us joy? What stirs nostalgia or fear? What gives us courage?" These are the questions we asked ourselves while creating the new 'Inside Out by Allegrío' menu," says Sabrina Corbo, Creative Director. "We wanted to give voice to our emotions and express them through flavor. Representing emotions through the hands of Allegrío's chefs has been an emotional journey, with memories, laughter, and even tears transformed into unique dishes, all with the aim of evoking deep feelings."

From L to R: Pizza Chef Peppe Aiello, Sommelier Davide Gelormini, Pastry Chef Silvia Moroni, and Executive Chef Daniele Creti

Executive Chef Daniele Creti’s Emotional Culinary Creations

The menu is crafted to evoke emotions through food. Chef Daniele Creti's arrabbiata pasta, for instance, is a tribute to his father’s favorite meal and symbolizes Anger, vividly represented by the color red through chili peppers, tomatoes, and ‘nduja sausage. For Fear, Creti draws from his childhood fear of the dark "boogeyman," creating a dish with a crispy egg coated in charcoal with black Parmigiano Reggiano cream. The Nostalgia dish transports diners back to his grandmother’s kitchen in Puglia, with a comforting fried veal cutlet and lemon butter sauce reminiscent of his childhood.

LA PAURA – FEAR: Black Parmigiano Cream and Crispy Egg with Vegetable Charcoal

INTREPID: Cabbage Roll Stuffed with Slow-Cooked Pork, Cheddar Dripping, and Curry Crisp

NOSTALGIA: Homemade Veal Cutlet Crusted in Cereals, Butter, Lemon, and Parsley Sauce, Served with Fries

Pizza Chef Peppe Aiello’s Pizzas: A Taste of Emotions

Master Pizzaiolo Peppe Aiello infuses his personal memories and emotions into his pizza creations, offering three distinct styles: traditional Neapolitan round pizzas, the signature "Matta" pizza (a fusion of Roman and Neapolitan styles), and oven-fried pizzas. A standout is the IN LOVE pizza, dedicated to his wife, featuring a unique double cooking method—fried and baked—and combining simple ingredients like ricotta and semi-dried tomatoes with the bold flavor of raw shrimp. Another highlight is the INTREPID pizza, topped with Ischian rabbit, inspired by his grandmother’s Sunday lunches. This dish, symbolizing her courage and resilience, evokes strong emotions and deep family connections.

IbNTREPID:“La Matta” Pizza with 24-month Parmigiano Cream, Rabbit Sauce Topped with Ischitana Rabit, Basil Pesto, Thyme and Rabbit Oil

IN LOVE: Oven-Fried Pizza with Buffalo Ricotta and Semi-Dried Tomatoes, Raw Mazara del Vallo Shrimp, Raspberry Crumble, Pink Pepper

NOSTALGIA: “La Matta” Pizza with Purple Potato Cream, Caserta Black Pork Sausage, Chicory, Fiordilatte, Provola, Fennel Seeds, Sprouts

Pastry Chef Silvia Moroni’s Desserts: Sweet Emotions on Every Plate

Pastry Chef Silvia Moroni brings Allegrío’s emotional dining concept to life with her desserts. The Courageous maritozzo is accompanied by a chocolate Colosseum, symbolizing the strength of Roman gladiators. The crostatina with cherries and blueberries evokes Envy, while the Neapolitan pastiera represents Luck, and the baba embodies Passion. The Nostalgia tiramisu is inspired by the chef's first taste of bitter coffee paired with mascarpone cream during childhood. Lastly, the Joyful fried bomba, filled with cream or Nutella, is pure happiness on a plate.

JOY: Joy’s Bomb – Fried Bomba Filled with Lemon and Vanilla Custard, Topped with Lemon Cream and Lemon Zest

INTREPID: Gladiator – Miniature of the Colosseum in 70% Dark Chocolate, Served with a Trio of Roman Maritozzi with Pistachio Cream, Chopped Pistachios, and Whipped Cream

FEAR: Dark Chocolate Mousse with Hazelnut Praline and Dark Chocolate Covered with a Rocher Glaze

A Wine Pairing Journey

Sommelier Davide Gelormini has meticulously curated a selection of wines to complement each emotionally charged dish, ensuring the dining experience resonates with deep feelings of joy, nostalgia, and excitement. His thoughtful pairings are designed to elevate the flavors and textures of the menu, creating a seamless harmony between the wine and food. Each sip enhances the emotional depth of the meal, offering guests a truly immersive, creative, and joyful journey through the Allegrío experience.
