Under the leadership of Chef Simone Lezzerini, the restaurant opened just over a year ago and has quickly earned prestigious accolades, including recognition in the 2025 Michelin Guide, Identità Golose Guide, and Forbes’ 100 Innovative Restaurants 2025.

Surrounded by rolling hills and unspoiled countryside, the restaurant blends gourmet dining with a relaxed yet refined ambiance. Francesca Pozzi and Federico Fortin, the visionaries behind the project, have created a space where Chef Lezzerini’s innovative take on Tuscia’s traditions, combined with his passion for local ingredients, offers a dining experience that bridges heritage and modernity.

The Restaurant

N’Uovo Vino e Cucina weaves together the charm of tradition and the flair of innovation, offering an ambiance that is both refined and welcoming. Behind the scenes, N’Uovo is powered by a talented team dedicated to delivering a seamless dining experience. Sous-Chef Alessio Martella works alongside Chef Simone Lezzerini in the kitchen, while Pastry Chef Irene Corbucci oversees the restaurant’s desserts and the hotel’s breakfast offerings.  

Restaurant Manager Alessandro Mancone oversees the dining experience with expertise, ensuring seamless coordination in the dining room and wine cellar. Leading with precision, Denise Ranalletta is supported by team members Flavio Deonette, Marta Nardocci, and Alessandro Murgiuc, creating a well-orchestrated team dedicated to exceptional service. Together, this team ensures that every guest feels the perfect balance of professionalism and hospitality.

The Chef: Simone Lezzerini

Chef Simone Lezzerini, born in 1996 in Rome, has quickly established himself as one of the most exciting talents in the culinary world. With experience in Michelin-starred kitchens like Enoteca La Torre and Pulejo Ristorante of Rome, Lezzerini honed his skills under celebrated chefs Domenico Stile and Davide Pulejo. At just 28, he brings a fresh yet deeply thoughtful approach to his cooking, rooted in showcasing local ingredients through modern techniques while respecting traditional flavors. Lezzerini’s connection to food runs deep, growing up helping his restaurateur parents and working with local produce, developing a profound appreciation for quality ingredients and a meticulous attention to detail.

Since joining N’Uovo Vino e Cucina in 2023, Chef Simone Lezzerini has elevated the restaurant into a true culinary destination. His menu masterfully combines Tuscia’s rich traditions with modern techniques and inventive pairings, showcasing his deep respect for heritage and bold creativity. The Menu

N’Uovo Vino e Cucina offers a menu that reimagines Tuscia’s rich flavors through modern techniques and meticulous attention to detail. Chef Simone Lezzerini sources ingredients from small local producers, such as organic eggs raised on hemp seeds, artisanal cheeses, and freshly picked herbs, ensuring each dish is deeply rooted in the region’s culinary traditions. Sustainability is a cornerstone of Lezzerini’s approach, with every part of an ingredient creatively used to minimize waste. The menu evolves with the seasons, offering a harmonious balance between bold innovation and Tuscia’s heritage, with prices ranging from €15 to €32 per dish.


The menu begins with Appetizers, priced between €18 and €32, where standout dishes include the Torta di Zucca (€32), a butternut pumpkin tart served with sheep’s blue-veined sauce and white truffle, and N’Uovo alla Brace (€18), a roasted egg paired with cardoon sauce and hazelnut ash oil. Among the First Courses (€18–€24), the highlight is the Risotto al Latte (€20), crafted with local raw milk, smoked robiola with hay, cress, and laurel.

For Main Courses (€20–€26), standout creations include the Pollo Ruspante (€20), a free-range chicken dish served with persimmon chutney and barbecued corn, and the Barbecued Eel (€22), paired with quinces, roasted cauliflower, and beef jus. Another highlight is the Cheese Platter (€16), showcasing a curated selection of local cheeses that offers a delicious way to discover the artisanal traditions of Tuscia’s small producers. Desserts (€10–€16) bring the meal to a close with inventive options like Autunno (€14), a chocolate cake with spicy red wine, pecan ice cream, and fresh truffle.

For those seeking a comprehensive experience, N’Uovo offers two tasting menus: a 5-course menu (€60) and a 6-course menu (€70), both carefully curated by Chef Lezzerini to showcase the restaurant’s standout offerings. The Hotel: Antico Borgo di Sutri

The Hotel Antico Borgo di Sutri provides an idyllic setting for N’Uovo’s culinary excellence. Situated within an 8-hectare park, this 4-star property features 21 fully renovated rooms equipped with modern amenities, blending timeless charm with contemporary comfort. The hotel also serves as a premier venue for events, hosting weddings, conferences, and special occasions tailored with precision and style. Adding to its appeal is the Church of Our Lady of Lourdes, a consecrated space built in 1948 by the Sansoni Montenero family. Recently repainted in April 2024, the church offers an intimate setting for up to 50 guests inside, with additional capacity in the external square.
