A brainchild of Lorenzo Di Paolantonio, a passionate local restaurateur, Linfa is his second Michelin-starred masterpiece. After elevating Cum Quibus to star status, Lorenzo took a leap of faith in 2019, crafting a space where culinary creativity meets the warmth of Tuscan hospitality. Like a well-scripted fairytale, Linfa earned its own Michelin star just a year later.

At the heart of Linfa’s kitchen is Chef Vincenzo Martella, a Salento-born chef whose cooking blends tradition with modern creativity. Moving to Tuscany in 2014, he found a home where his skills could evolve, shaping a style that is both structured and expressive.

Martella’s culinary journey began in Brindisi, where he studied hotel management before advancing his expertise in food science in Rome. His career took off at Michelin-starred La Rosetta in Rome, followed by roles in top kitchens across Italy and the U.S., including the Vivace Restaurant at Four Seasons Aviara in San Diego. He further refined his craft at an internship at the three-Michelin-starred St. Hubertus under Norbert Niederkofler.

His philosophy is simple: refine every element with precision, highlighting the purity of flavors. He masterfully balances vegetables, seafood, and meats, especially game, creating dishes that are both deeply satisfying and true to Tuscan tradition. His expertise in sauces enhances flavors without overpowering them, ensuring each ingredient shines. With a menu that evolves with the seasons, his cooking remains fresh, dynamic, and rooted in craftsmanship.

The Espressione Menu (€130) features six courses designed to showcase the chef’s most inspired creations, while a customizable five-course option (€120) allows guests to personalize their experience. A unique Fifth Quarter Menu (€120), available only through online booking, honors Tuscany’s culinary heritage by transforming often-overlooked ingredients and traditionally lesser-used cuts into refined, innovative creations that highlight the region’s rich history and bold flavors. Individual courses range from €36 to €45, and desserts are priced at €20, ensuring a dining experience that reflects both quality and seasonality.

Sommelier Cesario Delle Donne, a Lecce native, curates an impressive collection of over 1,000 labels housed in an underground cellar dating back to 1200. Delle Donne’s deep knowledge and enthusiasm make each pairing an experience of its own, elevating every dish to new heights.

You can opt for a Classic Pairing (€90) featuring a well-balanced selection of Tuscan and Italian wines, a Prestige Pairing (€130) with rare and vintage labels, or a Great Italian Wines pairing (€280) for the ultimate indulgence. For those who enjoy a sparkling touch, a Champagne Pairing (€130) offers a refined take on the perfect sip.
